Zucchini - Tahini Hummus

Hey Gorgeous!

I am writing this blog, currently from my phone, in a hotel in Mesa, Arizona.

I took a last minute business trip and was not able to film before I left, as I did before my trip to Colombia, or New York or any other travels.

However, before this trip, I commited to myself that I would stay clear of High Glycemic Foods, aka, foods that cause a raise in my blood sugar levels, such as crackers, candies, certain fruit, breads, potatoes, as my body was having an adverse reaction to the high glycemic foods. My kidneys and liver were in bad shape. Despite me living a general "healthy" lifestyle.
So basically no sugar and I am 14 days strong!

So with that being said, I have had to cook even more than usual. Which I am ecstatic about! I am learning so much and experimenting so much with the Foods and spices that are low glycemic, and are basically Straight Up Medicine Food. 
I'm elated to share all as I learn.

So needless to say, even while traveling you can maintain a healthy lifestyle. It just takes a little more effort. Which all good things come with a little effort :)

I'll make an effort to film a vid, while I am here. I am in the market for a new computer, cuz mine isn't doin so well. He's an old man, and about up for retirement and I didn't bring my filming materials but an iPhone should do just fine. :) haha I'll do my best.

As my favorite personal development mentor says "It's never a lack of resources only a lack of 
resource-fullness"

Ok now for this yumminess!!

This is so simple to make and so very delicious.

Ingredients
-1 large Zucchini cut into chunks or two small Zucchini cut into chunks
- 1/2 cup Tahini (I have the Woodstock brand that is unsalted and Literally has one ingrediant in the jar, which is "dry roasted hulled sesame seeds"
- 2 Cloves Garlic
- 2 Tablespoons Olive Oil
- Juice from 1/2 a Lemon
- 1 tsp Cumin
- 1 tsp Salt

Instructions:

Toss everything in food processor / blender.
Put into a bowl and eat!
I like mine with red and orange bell peppers, celery and/or cucumbers 😋


Nutritional Value: (Serves 4)
Calories: 256.6
Carbs: 5.5
Protein: 6.6
Fiber : 4.5
Healthy Fat : 24.15 

I'm addicted to this stuff! And it's so easy to make!

How To Make a Frittata

Hi Gorgeous! I have been on a food cleanse for the past 5 days. I am working on detoxing my body of caffeine and sugar! Woo! It's hard work for this caffeine and sugar fiend, like me!

Not that I eat a whole bunch of refined sugar, because I don't.
But come to find out, my body was having adverse effects even from things like Honey, Cashews, Bananas.
So, I am forced to do a reset and then slowly add in foods, to see what is triggering the allergies, which from mine understanding, is probably Sugar and high glucose foods.

Anyway, I will keep you posted on all that I learn, as well as on the new recipes, I have to create, because of it. Because, you see, lady, I LOVE food, I am such a foodie! I so much enjoy Favors and the whole experience of enjoying food with friends and family. 
I just really really enjoy it all.

So, even if my body isn't going to let me enjoy, regularly, foods that I enjoyed so much, I will make the necessary adjustments and make Yummy food with different ingredients.
I have already started experimenting and bought books, to help me get there.
In addition to some classes I will be taking soon.

So lucky for you. You will learn all that I do! While I continue to Optimal Health!

It's been a Pleasure to eat this all week, during the first stage of my food detox.

Ingredients: 
10 Organic Eggs (whichever your preference) 
2 Teaspoons (or more of Turmeric)
3 Bell Peppers ( for optimal flavor, I recommend red, yellow and orange)
1 Large Garlic Clove (or 2 small cloves)
2 Tablespoons Olive Oil
4-6 Stalks Asparagus
2 Tablespoons Water
1/2 Yellow Onion

Calorie/ Nutritional Content :
(Serves 4)
Calories (energy) - 290 
Protein - 17 grams
Carbs - 3 grams
Fat - 26 grams
Fiber - 3 grams

Easy Healthy Homemade Sloppy Joes

Sometimes, we create things and they totally bomb. 
That was not the case with this Easy Healthy Sloppy Joe Recipe, but it is the case of the video that accompanies it! Not one of my best videos, but none the less, it will walk you through the cooking process :) 
Really! More than anything else, I super hope that you enjoy this recipe!

Ready For The Video! 

Ingredients: 
1 tablespoon olive oil
1 1/4 pounds ground turkey meat
1 Tablespoon Honey
1 Tablespoon Coconut Sugar 
**I Use Honey & Coconut Sugar because they are low on the Glycemic Index, so they don't spike our blood sugar levels and more easily broken down and used as nutrients/ energy for our bodies!***
1/2 - 1 Tablespoon, McCormick brand steak seasoning or whatever Steak Seasoning you have in your cupboard 
1 onion, chopped
1 tablespoon red wine vinegar
1 tablespoon Worcestershire sauce
2 cups tomato sauce
2 tablespoons tomato paste

1230 Calories for the whole batch of Sloppy Joe Meat and usually will make us  6-7 sandwiches
100 Grams of Protein per batch, so about 16 grams per serving.

What Bread Do I Use?!

My Husband is very traditional with his Sloppy Joe bread and as he will make sandwiches with the Ezekiel bread, he won't eat it with his sloppy joes, so below is a picture of his sandwich and my open face sandwich. I will admit, that his is more visually appealing, but mine is equally, if not more, tasty!


I Love Ezekiel Bread! 
It's made from sprouted grains, it's flour less and low on the Glycemic index and most importantly, I don't get tummy aches from eating it! It's all Real Ingredients! (which are the best ingredients! :)

PF Chang's Chicken Lettuce Wraps

Ummm This is Really Yum! 
& I added some of my additional healthy flair. For example, that ginormous, engulfing Collard Green leaf. It is so beautiful, so tasty and more nutritious than your plain boring lettuce head ;)

Please Enjoy!! 

Prep Time: 10 Minutes
Cook: 15 Minutes


Ingredients:
- 1 Pound Chicken or Approx 2 chicken breasts
- Collard Greens or Lettuce
- 1 Large Onion
- 2 Tablespoons Minced Garlic
- 1 Tablespoons "Bragg"(<<brand) Liquid Amino Acids
- 1/4 Cup Hoisin Sauce
- 2 Teaspoons Minced Garlic
- 1 Tablespoon Rice Vinegar

- 1 Bunch Green Onions 
- 1 Small Can Water Chestnuts 
- 1 Tablespoon Olive Oil
- 2 Teaspoons Sesame Chili Oil

For The Sauce
I don't measure it out! So just do it to your tastebuds delight.
-Dijon Mustard or Spicy Mustard
-Liquid Aminos
-Tapatio Sauce or Sirracha !


Energy (calories) :
1036 Calories for the whole batch. I typically make 4 Large Collard Green Wraps so approx 259 calories each. 
This meal is high in protein, low in healthy carbs and healthy fats, not to mention you get a nice serving of veggies!

Now For Today's Festivities! Enjoy These! They are So YUM!


Pancake Calories: 98.8 each square (makes 12 squares)

Ingredients: 
1 cup Oat Flour
1/4 Cup Coconut Flour
1/2 Teaspoon Pumpkin Pie Spice
1/4 Teaspoon Nutmeg or Cinnamon
2 Teaspoons Baking Powder

1 Egg
1/4 Cup Honey
1 Cup Almond Milk
1/2 Cup Pumpkin Puree
1 Tablespoon Coconut Oil

1/4 Cup Chocolate Chip Bits 
(a good sugar free brand is Lily's Sweets Chocolates (bought online) ..or for Dairy Free Chocolate Bits try "Enjoy Life" chocolates (those can be found at many local markets)


Dairy Free Coconut Whipped Cream Recipe: 
Get one can regular coconut milk. Pour into a container, say a mason jar for example and then place in fridge with lid for minimum 2 hours..you could keep it in there two days but 2 hours minimum, Then take it out and spoon out coconut milk solids. Put in a new bowl Grab a wisk Whisk in 1 tablespoon Honey & 3-4 drops Stevia And whisk whisk whisk! "Wa La!" Enjoy!

Yellow Thai Pumpkin Curry w/ Chicken in a Pumpkin Bowl!!

YUM!! Yellow Pumpkin "Basic White Girl" Thai Curry, with Chicken, in a Pumpkin Bowl!
hehe ;)

Ingredients: 
-One "pumpkin pie" pumpkin 
***OR IF YOU DO NOT WANT A PUMPKIN BOWL****: 
-Simply get pre-sliced pumpkin chunks, toss lightly with Olive Oil and Bake in Oven for 20-22 minutes until they are tender.
-1 Fresh Clove Garlic
-1 Small Yellow Onion..or 3/4 of a Medium Onion
-1 Small Can of Low Sodium Chicken Broth
-1.5 Tablespoons Yellow or Red Curry (I used yellow)
-1 Pound of chicken (that you will slice into 1X1 inches) 
(I use hormone free chicken)
-1 Can Organic Full Fat Coconut Milk
-1 Tsp of Honey (I add more at the end, to make the flavor more mild, so that's a Tip, if it's too spicy for you initially!
- Juice from 1 Small Lime
-and Cilantro to garnish on the top!
Optional : Rice

Fig Date Cupcakes with Vanilla Cashew Cream

Cupcake Base:
1 Cup Walnuts
1/2 Cup Raw Cashews
12 Dry Pitted Dates
1 Cup Dried Figs
1/4 Teaspoon Salt
Coconut Vanilla Cashew Cream: 
1 Cup Raw Cashews (soaked for 4 or more hours)
1 Tablespoons Vanilla Extract (or Vanilla bean gum)
1.5 Tablespoons Honey or Maple Syrup
1 Tablespoon Coconut milk
1/2 Tablespoon coconut oil




Now just like any cupcakes, lovely lady, these cupcakes are high in calories and just like any other cupcakes you do not want to eat 5 in one sitting. So these are considered "Energy Bars"
With that being said. Check out this Nutritional Info!

Nutritional Content:
Calories (Energy): 290
Protein: 19 Grams!
Carbs: 37.25 Grams
Fiber: 5 grams
It is also packed with 1.5 servings of Fruit!

DIY Pumpkin Pie Recipe

Whole Pie Serves 10 @ 110 Calories a slice.

Pie Crust Ingredients:
  • 1/2 Teaspoon coconut sugar
  • 1/4 Cup unsweetened applesauce 
  •  1/4 Cup coconut oil 
  • 1/2 Cup coconut flour 
  • 1/2 Cup Oat flour (MAKE YOUR OWN OAT FLOUR): by taking the desired measurement of oat flour, in raw oat form and tossing it into the blender, blend until it is in a powder form and "WA LA!" You have Oat Flour
  • 1/2 Teaspoon Butter Extract
  • 1/2 Teaspoon Salt
  • 4-5 Tablespoons Ice Water
PIE Crust Compliments of Me ;) and Can be used with any flavor pie, it's flaky and delicious!! (Hearts in my eyes face) hahah

HINT: Best way to preserve the prettiness of your crust is to place foil around the edges until the last 5 minutes of baking.

One 9.5 Inch Glass Round Pan

Pie Ingredients:

  • 1 can (15oz) pumpkin puree
  • 1 (13.5oz) can full-fat coconut milk
  • 1/4 cup rolled oats (20g)
  • 2 tbsp ground flax meal
  • 1/3 cup coconut sugar or brown sugar 
  • 4 drops pure stevia, or 2 tbsp extra brown sugar (Stevia makes it taste more clean) (Brown Sugar will add a little sugary kick to it) You're Choice. I go with stevia.
  • 2 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 1 tbsp pure vanilla extract

Chicken Souvlaki, Tzatziki Sauce & Greek Salad! "Easy Healthy Recipes"



Oh man! I encountered so many challenges when trying to edit this video!! But It is still up and available today, despite the hiccups.
You may notice, some voice over, in the video because my mic went temporarily hay-wire. Additionally, some clips went missing...and yea, that's life sometimes!
...Good Thing, I am not a perfectionist, I would probably drive myself INSANE!! and never get anything done!

Chicken Souvlaki Ingredients:
1-2 Pounds Chicken (with all fat removed) I used tenderloins
1/4 Extra Virgin Olive Oil
1/4 Cup Lemon Juice
1/4 Cup Red Onion
3 Tablespoons Plain Greek Yogurt
2 Cloves Minced Garlic
1 Tablespoon Red Wine Vinegar
1.5 Teaspoons Dried Oregano
1 Teaspoon Dried Thyme
1/2 Teaspoon Corriander
1/4 Teaspoon Salt and Pepper Both

Tzatziki Sauce:
1 Large Cucumber (seeded and peeled)
Salt (to taste)
1/2 Cup Plain Greek Yogurt
1.5 Cloves Minced Garlic
1 half of a large freshly squeezed lemon
1 Tablespoon Olive Oil
1 Tablespoon Chopped Dill (get fresh if you can)

"Easy Healthy Recipes" Summer Strawberry Treat


LEVEL OF DIFFICULTY: Ridiculously simple and takes no time at all, so I am giving this one a Zero out of 5.
PRICE: $2. 6 strawberries, a half a lemon and Unsweetened coconut
TIME: 3 minutes.



Coconut has a myriad of benefits! Just to name a couple: Coconut is excellent for the digestive system, because it's high in fiber. It's low in the glycemic index and speeds up the metabolism.

Lemons are some of my most favorite things!! They are good for EVERYTHING! Interanally and Externally.  Most especially alkalizing the body.They are basically in sum, the most effective natural cleaning agent, for the insides of your body, to your skin and even kitchen counter tops. I even used them during my "DIY Shellac Manicure Video". I Love Lemons!

Strawberries are just Delicious, Period. They also help burn stored fat. They are High in fiber and low in calories. Strawberries naturally promote eye health and they are filled with biotin, so they are great for our hair, skin and nails. Just to name a few benefits! 


Here is the other recipe, I wanted to share, but didn't have time to make.
They are like 100% natural strawberry gummy candies. yummy in my tummy! and for my tongue! haha
