Healthy Chocolate Chip Pumpkin Pancakes

(Gluten Free & Sugar Free)

Hey Gorgeous! Sorry I scared ya there in the video, it's all in the fun of the season! haha! ;)
So, I have had so many requests for pumpkin recipes and now I am DONE with them! This is the last pumpkin recipe, I will be sharing with you HERE on HotHealthyHappy.TV.

Now For Today's Festivities! Enjoy These! They are So YUM!


Pancake Calories: 98.8 each square (makes 12 squares)

Ingredients: 
1 cup Oat Flour
1/4 Cup Coconut Flour
1/2 Teaspoon Pumpkin Pie Spice
1/4 Teaspoon Nutmeg or Cinnamon
2 Teaspoons Baking Powder

1 Egg
1/4 Cup Honey
1 Cup Almond Milk
1/2 Cup Pumpkin Puree
1 Tablespoon Coconut Oil

1/4 Cup Chocolate Chip Bits 
(a good sugar free brand is Lily's Sweets Chocolates (bought online) ..or for Dairy Free Chocolate Bits try "Enjoy Life" chocolates (those can be found at many local markets)


Dairy Free Coconut Whipped Cream Recipe: 
Get one can regular coconut milk. Pour into a container, say a mason jar for example and then place in fridge with lid for minimum 2 hours..you could keep it in there two days but 2 hours minimum, Then take it out and spoon out coconut milk solids. Put in a new bowl Grab a wisk Whisk in 1 tablespoon Honey & 3-4 drops Stevia And whisk whisk whisk! "Wa La!" Enjoy!

Fig Date Cupcakes with Vanilla Cashew Cream

Cupcake Base:
1 Cup Walnuts
1/2 Cup Raw Cashews
12 Dry Pitted Dates
1 Cup Dried Figs
1/4 Teaspoon Salt
Coconut Vanilla Cashew Cream: 
1 Cup Raw Cashews (soaked for 4 or more hours)
1 Tablespoons Vanilla Extract (or Vanilla bean gum)
1.5 Tablespoons Honey or Maple Syrup
1 Tablespoon Coconut milk
1/2 Tablespoon coconut oil




Now just like any cupcakes, lovely lady, these cupcakes are high in calories and just like any other cupcakes you do not want to eat 5 in one sitting. So these are considered "Energy Bars"
With that being said. Check out this Nutritional Info!

Nutritional Content:
Calories (Energy): 290
Protein: 19 Grams!
Carbs: 37.25 Grams
Fiber: 5 grams
It is also packed with 1.5 servings of Fruit!

In addition to what was mentioned in the video, "happiness scientist", Sonja Lyubomirsky suggests that any given task, that we do once and gives us a "high", if you will, such as "bringing a lover breakfast in bed" if done regularly will begin to feel like a chore and in fact will begin to be taken for granted over time, by the person receiving the breakfast in bed.

In a video, coming soon, I would like to suggest ways on how to combat, complacency in relationships as well as "how to get more recognition and appreciation from your partner"

Additional thoughts on this topic, as my mind began to drift. I believe parenthood is one of the most Altruistic Goals, as long as we continue to see it as one, it can bring one, yes, many struggles, but also much immediate and long term satisfaction. We just have to not let ourselves view, bringing "breakfast in bed" a chore.. :)
